Restaurants love Teenie Greenies

Teenie Greenies microgreens from Cultivation Works now grace the delicious salads and other dishes at the Sea Glass restaurant in Maine’s luxurious Inn by the Sea. Renowned chef Steve Sicinski agreed to feature Teenie Greenies after being introduced to them by Mary Jo Marquis, Director of Social Enterprise and Community Partnerships at Creative Work Systems.

“Their microgreens are fresh, crisp and terrifically flavorful,” said Sicinski. “We’re currently using them in our chopped and kale salads, and for taste and texture throughout the menu.” The intimate ocean view restaurant serves breakfast, lunch and dinner year round, and the Chef is exploring options for using microgreens for all three menus.

“The greens arrive still growing in flats with just their first, delicate leaves developed, and that means they’re packed with flavor and nutrients. It just can’t get fresher or more local than this.”

Sea Glass is just the latest upscale local restaurant to carry Teenie Greenies, joining an already impressive list that includes Portland’s Timber, Sonny’s, Street & Company and Aurora Provisions, in addition to On the Marsh in Kennebunk.

Chef Sicinski was drawn to Teenie Greenies both for their quality and for the Cultivation Works mission to provide employment opportunities to adults with disabilities. Having Cultivation Works farmers hand-deliver the trays of growing microgreens not only helps busy chefs, but offers a learning experience for the producers.

“Adults come to our greenhouses to learn about good agricultural practices,” says Marquis. “We grow our microgreens with non-GMO seeds and organic soil. The program helps develop practical skills for sustainable farming, and the producers gain confidence in their abilities.”

And the harvests have proved extremely successful.

“Cultivation Works calls to say when they’re growing something new, like a spicy mix of red and green mustard. My answer is always the same: send it along, we’ll take whatever you’re growing. So far it’s all been terrifically fresh and flavorful.”
